Sweet Potato Avocado Toast

I am always in search for a healthy snacks or meals that will add variety and help me stay on track.

Sweet Potato Avocado Toast with an egg! The best part about not having avocado toast for breakfast is that I can have it for lunch😍 Sweet potato toast is easy to make and tastes good with sweet or savory toppings!


To make, slice a sweet potato down the middle into about 1/4 inch slices. Spray both sides with olive oil and cook in the oven at 400 for about 20 minutes or so.


I topped with with a mashed avocado, a soft boiled egg, and everything but the bagel seasoning. To make the soft boiled egg, add the egg to boiling water and cook for 6 minutes and 30 seconds. Place the eggs straight from the boiling water to an ice bath and let sit for 5 minutes. Peel and eat!
