Roasted zucchini, yellow squash, red and white onions, eggplant and of course garlic! With chickpeas

Want to try something light for the hot weather?



For this size cast iron pan I used:


1 zucchini

1 yellow squash

1 red onion

1 white onion

1 small purple eggplant

1 head of garlic

4 oz boiled chickpeas ( you can use canned, but fresh is always better!)

3 oz feta cheese ( goat cheese works too)

3 table spoons olive oil

Fresh herbs of choice ( I used oregano and parsley)

Salt and lemon pepper


Cut the vegetables diagonally, half inch thick.

Arrange them in the pan, put the chickpeas in the middle.

Drizzle with the oil, salt and pepper to taste

Roast in 350 F preheated oven for 20 minutes, and then additional 15 minutes on broil.

When it's done take out of the oven, wait 5 minutes to cool down.

Sprinkle with the herbs and cheese and eat well! And don't forget, stay active. Just a walk is better than nothing! 😉
