Easy and delicious recipe. Peel two medium size Russet potatoes and cut them in half inch cubes and sprinkle with salt. Rub the bird with salt pepper and paprika.
Put them together with halved garlic heads in deep cast iron pan. Put 3-4 spoons olive oil on top and roast for 20-25 minutes at 350 F. Cut onions, peppers, zucchini and carrots the same size as the potatoes, mix them with fresh herbs ( I used rosemary and oregano), salt and pepper.
Add in the pan and roast for another 15 min ( the last 5 minutes put on broil)
