I know, meal prep is not always fun.
But it pays off. Here is a suggestion:
Egg whites omelets made ahead.
Fresh vegetables salsa-red onions, white onions, green peppers, red peppers, tomatoes...the options are endless.
Keep the omelettes and the veggies ( marinated with olive oil and fresh herbs) in the fridge and use them for the days you are busy and don't have time to cook.
Stay active, eat well!
