Cast Iron Pan Baked Sea Bass

Ingredients for 4 servings:
2 medium size onions, cut in one inch squares 4 medium size tomatoes, cut in one inch cubes 20 oz Sea Bass fillet (or your favorite type of fish) 2-3 sprigs if oregano 2-3 sprigs thyme 3 cloves of garlic, minced 2 oz white wine 4 table spoons olive oil Salt and pepper to taste

In a cast iron pan put 3 table spoons olive oil and heat it up over medium heat. Sautee the onions for 5 minutes, together with the herbs ( tie the oregano and the thyme together, so it's easier to remove later).

Add the garlic and sauté for 30 seconds and then pour the wine. Wait another minute it to evaporate and then add the tomatoes. Cook on the stove for another 10 minutes, occasionally stirring. In the meantime preheat the oven to 350 F.

Remove the pan from the stove, add salt and pepper and stir. Arrange the dish on top ( skin down), add pinch of salt and pepper on it and pour the remaining table spoon of olive oil on top.

Bake for 15 minutes at 350 F and then broil for additional 10 minutes. Let it rest for 10 minutes and serve.
