Beef and Vegetables Cast Iron Meal


We all have been there. You decide to clean up the fridge and there is a little bit of everything. A little bit of beef, zucchini or two, half of eggplant, one yellow squash, couple of peppers, a tomato.


Cast iron pan is always the solution! Sautee the beef ( if you are going to use fresh herbs now is the time to put them in the pan. The hot oil will extract the flavors from them).


Add the vegetables, cut in one inch cubes. Add onions, garlic, salt and pepper. Stir well and bake at 400 F for 25-30 minutes, stirring occasionally.

When its ready, put the tomato cut in wedges on top to give the dish some freshness.
