Baked Herring Stuffed with Fresh Herbs and Brown Butter Lemon Sauce


Baked herring stuffed with fresh herbs and brown butter lemon sauce, served with fresh tomato, cucumber and jalapeno salsa.








Ingredients:

1 medium size cleaned herring

1/3 cup roughly chopped mix of fresh herbs ( I used parsley, dill, oregano, chives)

1 lemon

Olive oil


For the salsa:

1 medium size cucumber, cut in half inch cubes

1/2 cup grape tomatoes, cut in half

1 jalapeno sliced thin

2 table spoons chopped cilantro

Juice of one lemon

2 table spoons of olive oil


For the sauce:

1/2 stick unsalted butter

2 table spoons lemon juice

1 table spoon capers ( optional)


Rub the herring with salt and pepper. Stuff the belly of the fish with the herbs and slice of lemon and pour the olive oil on top. Bake it for 15 min at 350F and then switch the oven to broil and bake for additional 5-7 minutes.


But the butter in a small sauce pan. Preferably aluminum one, so you can see the color of the sauce. Keep it on medium heat until it gets light brown, add the lemon juice, stir well and set aside.

Mix the ingredients for the salsa in a small bowl.

Serve the fish warm with the sauce on top and the salsa on the side.
